Rhubarb Crunch II

Ingredients

  • 2-1/4 c. all-purpose unbleached white flour
  • 2-1/4 c. brown sugar
  • 1-1/4 c. butter, melted
  • 2-1/4 c. oatmeal
  • 2-1/4 t. cinnamon
  • 1 c. white sugar
  • 2 Tbls. cornstarch
  • 3/4 c. - 1 c. water (less water if using frozen rhubarb)
  • 1 t. vanilla
  • 5 c. rhubarb, cut up
  • 1/4 t. red food coloring, optional
  • 1/2 c. berry jam, optional

Instructions

Mix flour, brown sugar, melted butter, oatmeal and cinnamon. Press half of the mixture into a lightly greased 9 x 13” pan.

In a saucepan, combine sugar, cornstarch, water, vanilla and rhubarb. Cook until thick and clear. Add red food coloring and berry jam if you wish. Pour over crust.

Cover with remaining crust crumbs and bake at 350 degrees for about 45 minutes.
