Rhubarb Bars
Ingredients
Crust
- 3/4 c. (1-1/2 sticks) of butter
- 1/2 c. powdered sugar
- 1-1/2 c. all-purpose unbleached white flour
Topping
- 3 eggs, beaten
- 1-3/4 c. sugar
- 1 t. vanilla
- 1 t. baking powder
- 1/3 c. all-purpose unbleached white flour
- 3 c. fresh rhubarb, cut fine
- 1 c. chopped walnuts
Instructions
Mix crust and pat into a 9 x 13" pan. Bake at 350 degrees about 12-15 minutes.
Mix topping ingredients together and pour over crust. Bake at 350 degrees for 30-35 minutes. Cool and cut into bars.
