Red Potatoes: Baked Slices
Serve with low-fat sour cream if you like, or good just plain.


Ingredients
- 3 or 4 medium-large red potatoes
- 3-4 Tbls. extra virgin olive oil (or garlic flavored olive oil)
- salt and pepper
- herbs of your choice: dill weed, minced parsley etc. (sprinkle to your liking)
Instructions
Wash, but do not peel potatoes and slice them as thinly as possible.
Put olive oil and seasonings in a bowl (big enough to hold potato slices); add potato slices and stir to coat.
Arrange them on a lightly oiled baking sheet in a single layer, in rows, but overlapping a little.
Bake at 350 degrees until brown and crispy (about 25-30 minutes). Watch them. You could also bake them at 375 degrees in you want to shorten cooking time.
