Red Potatoes: Baked Potato Casserole
Ingredients
- 10 āCā size red potatoes, cooked and cubed
- 6 pieces of center-cut bacon, cooked and crumbled
- 1 c. low-fat cheddar cheese, cubed
- 1 c. low-fat sharp cheddar cheese, shredded
- 1 bunch green onions, diced
- 1/4 c. real mayonnaise
- 1/4 c. low-fat sour cream
- 1 t. minced chives
- 1 t. garlic powder
- salt & pepper to taste
Instructions
In a large bowl, combine potatoes and bacon.
In another bowl, combine the remaining ingredients; add to potato mixture and toss gently to coat.
Transfer to a greased 9 x 13 x 2 inch baking dish.
Bake, uncovered at 325 degrees for 50-60 minutes or until bubbly and lightly browned.
