Ravioli: Fontina & Walnut Sauce

Carrie's favorite; so very easy and quick (a 10 minute meal)

Ingredients

  • 25 oz. bag of frozen good quality cheese ravioli (Rosetto brand)
  • 1/2 c. heavy cream
  • 1/2 c. grated fontina cheese
  • 1/4 c. mascarpone cheese
  • 1/4 c. toasted walnuts
  • salt & pepper to taste
  • chopped fresh chives

Instructions

Cook ravioli according to package directions. While it is cooking, start making the sauce.

In a small saucepan, bring cream to a simmer.

Add fontina and mascarpone cheeses and cook, whisking vigorously until melted and smooth.

Toss with the ravioli and chopped walnuts. Season with salt and pepper.

Sprinkle with chopped chives and serve.

NOTE: Freeze the left over chives to use another time.
