Raspberry Yogurt Muffins

Ingredients

  • 1/4 c. orange juice
  • 1 Tbls. canola oil
  • 1/2 t. almond extract
  • 8 oz. low-fat vanilla yogurt
  • 1 egg
  • 1/3 c. sugar
  • 2 c. all-purpose unbleached white flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 1 c. fresh or frozen raspberries

Instructions

Whisk together orange juice, oil, almond extract, yogurt and egg.

Add dry ingredients and stir just until moistened. Fold in berries.

Spoon batter evenly into greased or paper lined muffin cups until 2/3 full.

Bake at 400 degrees for about 20 minutes. Remove to wire rack.

NOTE: Makes 1 dozen.
