Quiche: Sweet Onion Gruyere and Bacon

Ingredients

  • 9-inch pie crust, unbaked
  • 6 slices center-cut bacon
  • 1 Tbls. butter
  • 1 cup chopped sweet onion (1 medium)
  • 3/4 c. grated Gruyere cheese
  • 2 large eggs
  • 2 egg whites
  • 3/4 c. low fat evaporated milk
  • 3/4 c. 1% milk
  • 2 t. cornstarch
  • 1/4 t. ground nutmeg
  • 1/2 t. pepper and 1/4 t. salt

Instructions

Fry bacon in a non-stick frying pan. Remove onto paper towel to absorb grease. Crumble bacon and set aside. Drain grease from frying pan.

Melt butter in frying pan and sauté onions until soft and golden, about 10 minutes. Stir in crumbled bacon and set aside to cool a bit. When cool, stir in cheese.

In a mixing bowl, mix (whisk or electric mixer on low) the eggs and egg whites. Add evaporated milk, 1% milk, cornstarch, nutmeg, salt and pepper, then mix to combine.

Spoon onion, bacon and cheese mixture into prepared pie crust. Pour the egg mixture evenly on top.

Adjust oven rack to lower third of your oven. Bake at 400 degrees for 30 minutes; reduce heat to 375 degrees and bake an additional 10 minutes.

Transfer to a rack to cool for at least 10 minutes before slicing.

NOTE: Can add sliced mushrooms also, if desired
