Quiche: Ham & Gruyere Mini Quiches

Ingredients
- 4 eggs, lightly beaten
- 1 c. low fat cottage cheese
- 1/4 c. milk
- 2 Tbls. unbleached all-purpose white flour
- 1/2 t. baking powder
- 1/4 t. ground nutmeg
- 1/4 t. pepper
- 1-1/2 c. shredded Gruyere or Swiss cheese
- 3/4 c. finely chopped fully cooked ham
- 3 Tbls. thinly sliced green onions
- 12 foil muffin cups, optional
Instructions
In a large bowl, combine the first seven ingredients; fold in the Gruyere cheese, ham and onions. Fill greased muffin cups three-fourths full. You can also use foil muffin cups instead.
Bake at 375° for 18-22 minutes until a knife inserted near the center comes out clean. Cool for 5 minutes before removing from pans to serving platter.
NOTE: Makes 10-12.
