Quiche: Ham & Broccoli

Great way to use leftover ham from a holiday meal
Ingredients
- 1 unbaked pastry shell (9-inch deep or 10-inch)
- 1 c. shredded Swiss cheese
- 1 c. mozzarella cheese
- 2 Tbls. unbleached white all-purpose flour
- 4 eggs, lightly beaten
- 1-1/2 c. milk
- 2 Tbls. chopped green onions
- ¼ t. salt
- ¼ t. pepper
- 1/8 t. dried thyme
- 1/8 t. dried crushed rosemary
- ½ c. diced fully cooked ham
- ½ c. chopped fresh broccoli, partially cooked
- chopped peppers, optional (see Note below)
Instructions
Place pastry shell in pie plate, prick generously with a fork. Bake at 425 degrees (glass) for 8-10 minutes until brown. Remove from oven and cool.
Toss cheeses with flour; set aside.
In a large bowl, combine eggs, milk, onions and seasonings. Stir in ham, broccoli and cheese mixture. Pour into prepared crust.
Bake at 350 degrees for 50 minutes or until set. Let stand 10 minutes before cutting.
NOTE: Serves 8. You can also add chopped peppers (any colors) if you'd like.
