Quiche: Crustless
Quick and easy
Ingredients
- 8-10 slices bacon crisply fried and crumbled or 1/2 c. diced ham
- 1/3 c. finely chopped scallion onions
- 1-2 c. chopped broccoli florets or chopped asparagus (fresh or frozen)
- 1/2 c. chopped green, red, yellow or orange peppers (or any combo)
- 1/2 c. shredded Swiss cheese and 1/2 c. cheddar cheese (or any choice)
- 1/2 c. Heartsmart Bisquick baking mix
- 2 c. milk
- 4 eggs
- salt/pepper
Instructions
Layer bacon or ham, onions, peppers, broccoli in a greased quiche pan (or 10-inch deep pie dish). Top with cheese.
Blend Bisquick, milk, eggs, salt and pepper and pour into the pan.
Bake at 350 degrees for 50-55 minutes until golden brown and knife inserted in center comes out clean. (If the top gets too brown, and the middle isn't done yet, cover with foil for the remaining of baking time.)
Let stand 5 minutes before cutting.
ANOTHER OPTION: Veggie Quiche – In bottom of a greased quiche pan, fill with chopped broccoli, cut up asparagus pieces, sliced Roma tomato, chopped green and red peppers, sliced mushrooms, black olives, diced scallion onions, and fresh chopped basil. Sprinkle with ½ c. cheddar, ½ c. Swiss and ½ c. fresh parmesan cheese.
Pour over the milk, eggs and Bisquick baking mix from above, sprinkle with salt and pepper and bake at 350 degrees for 50-55 minutes.
Let stand for 5 minutes, then cut and serve.
