Quesadillas: Smoked Pulled Pork
This is a recipe I came up with myself to use left smoked pulled pork.

Ingredients
- 2 c. leftover smoked pulled pork (see Note)
- 1 small yellow onion
- 1 small red onion
- 1-1/2 c. sliced bell peppers (your choice of colors)
- 1-1/2 c. pepper jack cheese, grated
- Pace Picante sauce or salsa
- 6 flour tortillas (8 inch)
- oil for cooking
- sour cream, for serving
Instructions
Sauté onions and peppers in a little oil until soft and browned (about 20-25 minutes). Transfer to a bowl and set aside.
When ready to cook, add a drizzle of oil in a large shallow Teflon fry pan and heat to low-medium heat.
Lay a flour tortilla in the pan, and on half the tortilla, quickly add a little pork, a little onion and peppers, some cheese and 1-2 Tbls. of picante sauce or salsa. Fold the tortilla over on top of the filling and cook 1-2 minutes until browned on the bottom. Flip over and brown the other side. Remove and slice into 3 triangles. Continue until all tortillas are used up.
Serve with a dollop of sour cream, if desired.
Store leftovers in refrigerator and heat in microwave.
