Pumpkin Waffles

Ingredients
- 2 c. unbleached all-purpose white flour
- 3 Tbls. firmly packed brown sugar
- 2 t. baking powder
- 1 t. baking soda
- 1 t. cinnamon
- ½ t. kosher salt
- 1-1/2 c. milk
- 1 c. canned 100% pure pumpkin
- 4 Tbls. butter, melted and cooled
- 3 eggs (1 egg yolk plus 3 egg whites) - SAVE 1 OF THE YOLKS
- 2 Tbls. apple cider vinegar
- 1/3 c. chopped pecans, optional
Instructions
Whip 3 egg whites with a mixer on high speed, until stiff peaks form. Set aside. Remember to save 1 of the yolks!
In a medium bowl, combine flour, brown sugar, baking powder, baking soda, cinnamon and salt; whisk together and set aside.
In another larger bowl, combine milk, pumpkin, butter, egg yolk and vinegar. Add dry ingredients and stir to combine. Gently fold in egg whites and pecans if desired.
Pour 1/2 cup batter onto a preheated and greased waffle maker. Cook to desired doness.
Serve with butter and syrup.
NOTE: Makes 7 or 8 waffles
