Pumpkin Scones

Starbucks Copy Cat Recipe

Ingredients

  • 2 c. unbleached white all-purpose flour
  • 1/3 c. brown sugar, packed
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 1 t. cinnamon
  • 3/4 t. ground cloves
  • 1/2 t. ground nutmeg
  • 1/2 t. ground ginger
  • 1/2 c. (1 stick) unsalted butter, cold and cut into cubes
  • 1/2 c. pumpkin puree
  • 3 Tbls. milk
  • 1 large egg
  • 2 t. vanilla extract

Glaze or Spiced Glaze (your preference)

  • 1 c. powdered sugar
  • 2 Tbls. milk
  • 1 c. powdered sugar
  • 1/4 t. cinnamon
  • 1/4 t. ground cloves
  • 1/4 t. ground ginger
  • pinch of nutmeg
  • 2 Tbls. milk

Instructions

Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside.

In a large bowl, combine flour, brown sugar, baking powder, baking soda, salt,cinnamon, cloves, ginger and nutmeg. Add cold butter pieces, and work into dry ingredients with a pastry cutter until it resembles coarse crumbs. You can also use a food processor and pulse a few times until coarse crumbs form (do not over mix).

In a another bowl, whisk together pumpkin puree, milk, egg and vanilla. Add to dry mixture and stir until a soft dough forms.

Working on a lightly floured surface, knead the dough 3-4 times until it comes together. Using a rolling pin, roll the dough into a 10-inch x 7-inch rectangle, about 1-inch thick.

Using a large knife or pizza cutter, cut the rectangle in half lengthwise, then cut into 2 even pieces crosswise, making four rectangles. Then cut each rectangle into 2 triangles, making 8 triangles.

Place scones onto prepared baking sheet. Place in oven and bake for about 12 minutes, or until tester inserted in the center comes out clean. Cool for 10 minutes before glazing.

To Make Glaze: Combine powdered sugar and milk. Whisk until smooth. If it is too thick, add a little more milk as needed; set aside.

To Make Spiced Glaze: Combine powdered sugar, cinnamon, cloves, ginger, nutmeg and milk. Whisk until smooth; set aside.

When ready to glaze, spoon the plain glaze on each scone. Then drizzle the spiced glaze diagonally across each scone (putting glaze in a clear plastic bottle, found at craft stores, with end snipped a tiny bit works slick.

Allow glazes to set before serving.
