Pumpkin Pecan Cobbler

Perfect in fall or Thanksgiving dessert.
Ingredients
- 1 c. + 3 Tbls. unbleached all-purpose white flour
- 2 t. baking powder
- ½ t. salt
- 3/4 c. white sugar
- 1 t. cinnamon
- ½ t. nutmeg
- ½ t. cloves
- ½ c. pumpkin puree
- ¼ c. milk
- 1-1/2 t. vanilla
- ¼ c. melted butter
- vanilla ice cream, for serving
Topping
- ½ c. white sugar
- ½ c. brown sugar
- ½ c. chopped pecans
- 1-1/2 c. very hotwater
Instructions
In a medium bowl, stir together flour, baking powder, salt, sugar and spices. Set aside.
In a smaller bowl, stir pumpkin, milk, melted butter and vanilla together to combine. Pour wet ingredients into dry ingredients and mix to create a thick batter.
Pour into a greased 9 x 9 inch or 11 x 8 inch rectangular baking dish with high sides.
In a separate bowl, stir sugar, brown sugar and pecans together. Spread evenly over the top of the batter.
Pour hot water over the entire things (without stirring) and bake at 325 degrees for 40 minutes or until the middle is set.
Cool 5-10 minutes before serving. Serve with vanilla ice cream.
