Pumpkin Patch Waffles
This recipe came from a kid's cookbook my 6 yr. old grandson checked out at his school library
Fun to make in Fall
Ingredients
- 4 Tbls. butter, melted and cooled a bit
- 2-1/2 c. buttermilk
- 4 large eggs
- 1 c. canned pumpkin
- 2-1/3 c. unbleached all-purpose white flour
- ¼ c. brown sugar
- ½ t. baking soda
- 1/2 t. salt
- 4 t. pumpkin pie spice
Instructions
In a large mixing bowl, combine flour, brown sugar, baking soda, salt and pumpkin pie spice. Stir together with a wire whisk.
In another mixing bowl, combine buttermilk and eggs and whisk until smooth. Whisk in pumpkin.
Pour the wet ingredients into the dry ingredients and whisk to combine. Pour melted butter into the batter and whisk to combine.
Preheat waffle iron and brush with a little canola oil or use cooking spray. Pour ½ cup of batter onto hot waffle iron, close lid and cook to desired doneness.
When done, carefully remove waffles. Repeat with remaining batter.
Serve with butter and syrup.
NOTE: Makes 13 waffles
For added flavor you can add mini chocolate chips or chopped pecans
