Pumpkin Bread - Whole Wheat
Ingredients
- 1/4 c. unsweetened applesauce
- 2 Tbls. canola oil
- 2 eggs
- 1/3 c. water
- 1 c. canned pumpkin
- 1 c. white sugar
- 1 c. whole wheat pastry flour (Bob's Red Mill)
- 2/3 c. all-purpose unbleached white flour
- 1/2 t. baking powder
- 1 t. baking soda
- 1 t. cinnamon
- 1/2 t. salt
- 1/2 t. ground cloves
- 1/2 c. chopped walnuts
Instructions
Combine applesauce, oil, water, eggs, pumpkin and sugar.
Stir in remaining dry ingredients until moistened. Fold in walnuts. Spoon batter into a large greased and floured loaf pan. Also makes 3 mini loaves instead.
Bake at 350 degrees for about 50-60 minutes; about 40 minutes for mini-loaf pans.
Cool for 15 minutes before removing from pan to wire rack.
