Pumpkin Bread
Moist and good flavor
Ingredients
- 1 c. butter, softened
- 1 c. white sugar
- 1 c. pumpkin puree
- 2 eggs, slightly beaten
- 1/2 t. vanilla
- 1/3 c. milk
- 1-3/4 c. all-purpose unbleached white flour
- 1/4 t. baking powder
- 1 t. baking soda
- 1 t. salt
- 1/2 t. ground cinnamon
- 1/4 t. ground cloves
- pecans, chopped
- raisins
- mini chocolate chips
Instructions
In a large bowl, with an electric mixer beat the sugar and butter together until light and fluffy. Beat in pumpkin and add the eggs. Set aside.
Mix the flour, baking powder, soda, salt, cinnamon and cloves together. Add the dry ingredients alternately with the milk and vanilla into the pumpkin mixture. Fold in raisins, nuts or chocolate chips if desired.
Pour batter into a large loaf pan that has been greased and floured.
Bake at 350 degrees for 45 minutes to 1 hour or until toothpick inserted in the center comes out dry.
When done, loosen edges with a knife and let stand in pan for 5 minutes before removing to wire rack to cool.
NOTE: Also makes 3 mini loaves; shorten the baking time by about 10 minutes.
