Quinoa: Porridge with Rolled Oats, Apples & Raisins

This is an energy packed, slow release breakfast!


Ingredients
Porridge
- 1/ 2 c. rolled oats
- 1/ 4 c. quinoa (white)
- 1/ 4 c. raisins
- 1/ 4 c. almond meal (see note)
- 1/ 4 c. flaxseed meal
- 1 small apple, chopped
- 2-1/2 to 3 t. ground cinnamon
- 1-3/4 c. water or (combo of milk & water)
Toppings for Serving
- 1/ 4 c. chopped walnuts
- brown sugar, for serving
- extra milk, for serving
Instructions
Combine oats, quinoa, raisins, almond meal, flaxseed, apple and cinnamon in a medium pot; add water (or milk and water to equal 1-3/4 cups liquid.)
Bring mixture to a boil, stirring regularly; reduce heat and simmer until oats are tender and liquid is absorbed (about 10 minutes).
Serve with chopped walnuts, a little brown sugar for sweetness (if desired) and a drizzle of milk.
Refrigerate leftovers. Heat in microwave to warm.
Mades 3-4 servings.
NOTE: Almond Meal is just finely ground almonds. I ordered off Amazon, but you could make your own.
