Pork Tenderloin: with Orange Marmalade Glaze

Ingredients
- 1 (1 to 1-1/2 lb.) pork tenderloin
- olive oil
- salt and pepper to taste
- 3-4 scallion onions, thinly sliced
Orange Marmalade Glaze
- 1/3 c. soy sauce
- 1/3 c. orange marmalade
- 1/3 c. honey
- 1 Tbls. plus 1 t. apple cider or rice vinegar
- pinch of red pepper flakes
Instructions
In a small sauce pan, bring the soy sauce, marmalade, honey, vinegar and red pepper flakes to a simmer over medium heat. Remove and let cool. Reserve half of the marinade for serving to use as a sauce with the cooked tenderloin. Refrigerate until needed. With the other half, marinate the tenderloin for a couple of hours using a gallon zip-lock bag or shallow baking dish.
When ready to cook, you can either grill the tenderloin or bake in oven.
Bake in Oven: Remove tenderloin from marinade (discard marinade) and lightly rub with a little olive oil. Salt and pepper to taste. Place in a shallow baking dish and bake at 350 degrees for about 45-50 minutes or until temperature reaches 165 degrees. Tent with foil for 5 minutes. Thinly slice into medallions and place on a serving platter.
To Grill: Prepare grill for high direct heat on one side and low heat on the other side. Remove the tenderloin from the marinade and coat with a little olive oil. Salt and pepper to taste. Place on the hot side of the grill. As soon as the tenderloin gets grill marks on one side (1-2 minutes), turn to get the grill marks on the other side. Continue until all sides are lightly seared. Move the tenderloin to the cool side of the grill. Cover and cook for 6-10 minutes more or until the internal temperature reaches 160 degrees. Remove from heat, tent with foil and let it rest for 5 minutes.
Thinly slice and place on a serving platter.
To Serve: Warm remaining marinade up and drizzle glaze over sliced medallions and sprinkle with scallion onions.
