Pork Tenderloin: Indonesian with Lime Sauce

Ingredients

  • 1 pork tenderloin
  • 3 Tbls. lime juice
  • 3 Tbls. reduced-sodium Kikkoman low sodium soy sauce
  • 3 Tbls. stir-fry sauce
  • 1 t. crushed red pepper flakes
  • 3/4 t. ground ginger or 1-1/2 t. fresh grated gingerroot
  • 3 garlic cloves, minced

Instructions

In a bowl, combine lime juice, soy sauce, stir-fry sauce, ginger, red pepper and garlic. Place the pork in a large re-sealable plastic bag; add half of the marinade. Seal bag and turn to coat; refrigerate for 2 hours, turning occasionally.

Cover and refrigerate remaining marinade for basting.

When ready to grill, drain and discard marinade.

Grill pork, covered, over medium heat for 20-25 minutes or until meat thermometer reads 170 degrees and juices run clear, basting occasionally with reserved marinade.
