Pork Roast: Jalapeno Glazed

Ingredients

  • approximately 3 lb. boneless pork loin roast
  • 1/3 c. jalapeno pepper jelly, warmed (see note)
  • 1/2 t. chili powder
  • 1/2 t. ground cumin
  • 1/2 t. salt
  • 1/4 t. garlic powder
  • 1/4 t. ground cinnamon
  • 1/8 t. black pepper

Instructions

Preheat oven to 350 degrees. In a bowl, combine spice ingredients; rub over pork. Place pork in a roasting pan. Roast until meat thermometer inserted into thickets part of pork registers 170 degrees (about 1-1/2 – 2 hours).

Brush with wamred jelly during the last 20 minutes of cooking time. Let stand 10 minutes before slicing.

NOTE: Use good quality pepper-jelly (not the stuff with the red dye in it). Use the leftover jelly by spreading some cream cheese on a plate, spread pepper jelly over the top and serve with crackers of your choice.
