Pork Chops: with Dijon Sauce

Ingredients

  • 4 boneless pork loin chops (3/4 inch thick)
  • 1 clove garlic, minced
  • 1/4 t. each salt and pepper
  • 2 t. canola oil
  • 1/3 c. chicken broth
  • 2 Tbls. Dijon mustard
  • 1/3 c. half-and-half

Instructions

Sprinkle pork with salt, pepper and garlic. Refrigerate a couple of hours in a Ziploc bag.

In a large nonstick skillet coated with nonstick cooking spray, cook chops in oil for 5-7 minutes on each side, or until meat thermometer reads 170 degrees. Remove and keep warm.

Stir broth into skillet, scraping up browned bits. Stir in the mustard until blended.

Stir in the half-and-half. Bring to a boil. Reduce heat; simmer uncovered for 5-6 minutes or until thickened.

Pour sauce over each chop to serve.
