Roasted Garlic White Chicken Pizza
A healthier alternative to traditional meat pizza.
Can use traditional pizza dough or flatbread crusts
Sauce freezes well, just thaw in refrigerator and stir.



Ingredients
Roasted White Garlic Sauce
- 1 Tbls. butter
- 8 cloves roasted garlic, minced
- 2 Tbls unbleached all-purpose white flour
- 1/2 t. black pepper
- 1/2 c. 1% or skim milk
- 1/4 c. half and half
- 1/4 c. Parmesan cheese
Pizza
- pizza dough (purchased or homemade) OR use 2-3 Flatbread crusts
- 1-1/2 to 2 c. boneless skinless chicken breast, cooked and shredded
- 1/4 c red onion, diced
- 3/4 c. Mozzarella cheese, shredded
- 1 t. fresh thyme, chopped (or 1/3 t. dried)
- 1/2 t. dried oregano
- 1 Tbls. fresh parsley, chopped
Additional Topping Choices
- chopped tomatoes
- sun dried tomatoes, chopped (in oil)
- fresh baby spinach
- chopped artichokes
- slice black olives
- sun-dried tomatoes, chopped
- crumbled cooked bacon (center-cut)
- red pepper flakes, for serving
Instructions
How to Roast Garlic: Cut off top of garlic bulb. Lay bulb on a piece of foil and drizzle with a little olive oil. Wrap foil around the bulb and place on a baking pan. Roast for 30-40 minutes at 400 degrees. Bulb and cloves should be soft. Remove from oven, open foil and remove garlic from each clove. The skins should come off easily. Then mash or mince the cloves and set aside.
Roasted Garlic White Sauce
Melt butter in a small saucepan. Sauté roasted garlic for 1 minute. Add flour and mix until well blended. Cook for 1 minute.
Slowly whisk in the milk and half and half. Mix in the pepper. Cook for about 3 minutes, or until it starts to thicken.
Remove from heat and stir in Parmesan cheese. Set aside.
Assemble Pizza
Spread dough into roughly a 12-inch circle or oblong shape on baking sheet or pizza pan. Or place flatbread on baking sheets or pizza pan.
Spread white sauce over the dough. Top with chicken and drizzle a little more sauce over, then add red onions, additional toppings of your choice (optional) and top with cheese.
Bake dough pizza for 17 minutes at 450 degrees, or until the crust is golden, and the cheese is melted.
Bake flatbread at 400 degrees or according to package directions.
Remove from the oven, sprinkle with herbs. Cut and serve immediately.
