Pineapple Rightside Up Cake

Ingredients
- 2 Tbls. butter
- 1/2 c. brown sugar
- 8-1/4 oz. pineapple slices or crushed, drained (save juice)
- 6 maraschino cherries, sliced
- 1 pkg. yellow cake mix
- 1 c. water (or pineapple juice to equal)
- 1/3 c. canola oil
- 3 eggs
- Truwhip (a healthier version of Cool Whip), optional
Instructions
Grease and flour a bundt pan.
In saucepan melt butter and stir in brown sugar until blended. Press mixture in bottom of prepared pan.
Cut pineapple slices in half and place 6 halves on top of brown sugar mixture. Cut each remaining pineapple half into 3 pieces. Place 1 piece between each pineapple half. Place a cherry in center of each pineapple half.
In large bowl, blend cake mix, water, oil, and eggs. Pour into pan.
Bake at 350 degrees for 45 minutes. Let sit in pan for 5 minutes then invert onto cooling rack.
Serve with whipped topping, if desired.
