Pineapple: Brown Sugar Roasted Pineapple

Ingredients
- 4 c. fresh or frozen pineapple chunks
- 1/4 c. butter, melted
- 1/4 c. brown sugar
- 1/8 t. salt
- ½ t. cinnamon
Instructions
Preheat oven to 450 degrees
If using frozen pineapple, microwave until it is mostly thawed. Use the juice in the sauce.
In a medium bowl combine butter, brown sugar, salt, cinnamon and pineapple juice, if you have it. Add pineapple chunks and gently toss until well coated.
Pour pineapple mixture onto a large rectangular baking dish.
Bake 20-25 minutes, stirring half way through. The pineapple is done when it turns a rich golden color and begins to brown, but before it starts to blacken.
