Pineapple Bread Souffle

Simple, easy to make and delicious.



Ingredients
- ½ c. butter, softened
- 1 c. white sugar
- 4 eggs
- 5 slices good quality white bread, cut into 1-inch cubes (French, Italian, sour dough)
- 20 oz. can crushed pineapple, drained
- 1/3 c. brown sugar, packed
Topping Choices for Serving
- vanilla ice cream
- whipped cream or Tru Whip
- Greek Pineapple Yogurt (Chobani)
Instructions
Grease a 6 x 10-nch baking dish and set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time.
Stir in the bread cubes and crushed pineapple until well blended.
Pour mixture into prepared baking dish. Sprinkle brown sugar evenly over top.
Bake at 350 degrees for 45-60 minutes, until bread tips on top are golden brown.
Cool before serving (or eat a little warm, if you prefer).
Serves 8
NOTE: This is perfect as is, but can also be served with a dollop of whip cream or scoop of vanilla ice cream, if desired.
