Pie Iron: French Toast Stuffed with Blueberries & Cream Cheese
We made these camping July 2023 at Pattison State Park.
Ingredients below are for 2 people. Adjust accordingly for the amount of people you are feeding.

Ingredients
- nonstick cooking spray or melted butter
- 4 slices of bread (I like French or sour dough)
- 3 Tbls. cream cheese, room temperature
- ¼ c. fresh blueberries
- 1 large egg
- 2-3 Tbls. milk
- ½ t. vanilla
- pinch of cinnamon
Instructions
In a bowl, smash blueberries into the softened cream cheese.
Spread two slices of bread with the cream cheese and blueberry mixture. Top each slice with another bread slice.
In another bowl, beat the egg with the milk, vanilla and cinnamon.
Dip each side of the sandwiches into the egg mixture to coat all around.
Coat pie irons with cooking spray or melted butter, then place the French toast sandwich inside. Close the irons and cook each side, over campfire coals, for a few minutes until bread is golden brown (watch carefully so they don't burn).
GRIDDLE METHOD: These can also be made on a griddle or in a fry pan. Assemble as instructed above. Heat griddle or fry pan to medium heat. Grease with a little butter or margarine. Place assembled and soaked sandwich onto griddle. Once the bottom sides get browned and toasted, flip and cook until the other side is browned and toasted.
