Pepperoni Caprese Bites with Basil Vinaiagrette

Ingredients
- 24 mini mozzarella balls
- 24 basil leaves
- 24 slices of pepperoni
- 24 small cherry or grape tomatoes
- 24 toothpicks
Basil Vinaigrette
- 1/3 c. olive oil
- 1 Tbls. white balsamic vinegar (or dark balsamic)
- ΒΌ t. garlic powder
- 1 scallion, finely minced
- 6 basil leaves, chopped fine
- 6 grinds of black pepper
Instructions
Onto each toothpick, thread a mozzarella ball first, fold the pepperoni (or salami) in half and half again then thread onto the toothpick. Next add the basil leaf, then the tomato. Continue until you have threaded 24 toothpicks. Place onto a serving platter until ready to serve with vinaigrette.
For the Vinaigrette: In a medium glass jar, add all of the vinaigrette ingredients and shake well. You can use a bowl and whisk instead. Let site at least 30 minutes to let the flavors develop.
Drizzle vinaigrette over toothpicks and serve
NOTE: You can assemble ahead of time and refrigerate until needed. Do not pour vinaigrette over until just before serving.
