Peppermint Kiss Cookies

Perfect during the Christmas season

Ingredients

  • 1-1/4 c. butter, softened
  • 1-1/2 c. powdered sugar
  • 1 t. vanilla
  • 1/2 t. peppermint extract (optional)
  • 1 large egg
  • 3 c. unbleached white all-purpose flour
  • 1 t. baking powder
  • 1/2 t. salt
  • 1/2 c. finely chopped candy cane flavored
  • Hershey's peppermint kisses, unwrapped

Instructions

In a mixing bowl, sift together flour, baking powder and salt. Set aside.

In a large mixing bowl, combine the powdered sugar, butter, extract(s) and egg. Using an electric hand mixer, beat at medium speed scraping sides of bowl until creamy.

By hand, with a wooden spoon, stir in the flour mixture, mixing until blended. The mixture will be a bit crumbly. Stir in the chopped kisses.

Shape the dough into 3/4-inch balls and place on a cookie sheet.

Bake about 9 minutes in a 350 degree preheated oven. Open the oven door and carefully press a candy kiss into each cookie. Continue baking for 2-3 more minutes, no more.

Remove pan from oven, let cookies sit for a minute on the pan, then remove to a cookie rack linked with paper towel to absorb the grease and cool.

Once cooled and candy kiss is hard again, store in an airtight container at room temperature or in the refrigerator for up to a week.

NOTE: Makes 45 cookies. Eat any extra Kisses that you didn't use for the cookies.
