Pear Salad

2 dressing choices

Ingredients

  • romaine lettuce, cleaned and broken up (for 8-10 people)
  • 3/4 c. lightly salted cashews
  • 1 granny smith apple, unpeeled, cut up fine
  • 1 pear, unpeeled, cut up fine
  • 1 c. Craisins or dried cranberries
  • 1 c. mozzarella cheese, finely shredded

Dressing #1

  • 1/2 c. white sugar
  • 2 Tbls. Dijon mustard
  • 1/2 t. salt
  • 1/3 c. fresh lemon juice
  • 1 Tbls. poppy seeds
  • 2/3 c. canola oil
  • Dressing #2
  • 1/4 c. white sugar
  • 1/3 c. fresh lemon juice
  • 2 t. grated onion
  • 1 t. poppy seeds
  • 1 t. honey mustard
  • 1/2 t. salt
  • 2/3 c. canola oil

Instructions

There are 2 dressing choices. Make dressing the night before. Put all ingredients in a small food processor and blend well for a couple of seconds. You will have leftover dressing, but it will keep about a week in the refrigerator.

To assemble salad, combine lettuce, cashews, apple, pear, dried cranberries and cheese. Pour dressing over all and toss to coat.

NOTE: This recipe will feed a large group; cut recipe in half to serve less people.
