Pear Cranberry Pecan Salad with Cinnamon Pear Balsamic
This is a version of my Apple-Goat Cheese Salad



Ingredients
- 6-8 cups torn mixed salad greens (enough to serve 4)
- 2 medium pears, diced
- 1/2 c. craisins or dried cranberries
- 3 Tbls. chopped pecans, toasted
- 2 Tbls. crumbled goat cheese
Cinnamon Pear Balsamic Dressing
- 2 Tbls. olive oil
- 4-1/2 t. good cinnamon pear balsamic
- 1 Tbls. honey
- 1-1/2 t. fresh lemon juice
- 1 clove garlic, minced
Instructions
In a large salad bowl, combine the greens, pears and craisins.
Dressing: In a container with a tight-fitting lid, combine the oil, cinnamon pear balsamic, honey, lemon juice and garlic; shake well. Or use a small bowl and stir with a wire whisk.
Pour dressing over salad and toss to coat.
Sprinkle with pecans and goat cheese. Serve immediately.
NOTE: Serves 4. You can adjust pears, craisins, pecans and goat cheese, if you wish.
