Peanut Butter - Criss Cross Cookies

I will always think of my mom when I bake these
My dad’s favorite cookie!
Ingredients
- 1 c. butter, softened
- 1 c. white sugar
- 1 c. brown sugar
- 2 eggs
- 1 t. vanilla
- 1 c. peanut butter, plain or with nuts (I use NATURAL Jiff)
- 3 c. unbleached all-purpose white flour
- 2 t. baking soda
- 1/2 t. salt
Instructions
In a large bowl, cream margarine, butter, sugars, eggs, vanilla and peanut butter. Stir in dry ingredients. Chill for a couple hours to make rolling into balls easier.
Roll into balls and place on ungreased cookie sheets. Take a floured fork and make a crisscross on each cookie to flatten. Dip fork in flour for each cookie.
Bake at 350 degrees 10-12 minutes or until lightly browned. Cool on wire racks lined with paper towel to absorb the grease.
