Peach Muffins
A very light and moist muffin.
Ingredients
- 1/2 c. butter
- 3/4 c. white sugar
- 1 egg (room temp.)
- 1 t. vanilla
- 1/2 c. plain yogurt or low-fat sour cream
- 1-1/2 t. baking powder
- 1-1/2 c. all-purpose unbleached white flour
- 1 c. diced peaches, (if using canned, drained well)
- 1 c. chopped pecans, optional
Instructions
Mix butter, sugar, egg, vanilla and yogurt or sour cream.
Stir in dry ingredients.
Spoon into greased or paper lined muffin cups until 2/3 full.
Bake at 400 degrees for 20-25 minutes. Remove to wire rack.
NOTE: Makes 12 muffins.
