Peach Muffins

A very light and moist muffin.

Ingredients

  • 1/2 c. butter
  • 3/4 c. white sugar
  • 1 egg (room temp.)
  • 1 t. vanilla
  • 1/2 c. plain yogurt or low-fat sour cream
  • 1-1/2 t. baking powder
  • 1-1/2 c. all-purpose unbleached white flour
  • 1 c. diced peaches, (if using canned, drained well)
  • 1 c. chopped pecans, optional

Instructions

Mix butter, sugar, egg, vanilla and yogurt or sour cream.

Stir in dry ingredients.

Spoon into greased or paper lined muffin cups until 2/3 full.

Bake at 400 degrees for 20-25 minutes. Remove to wire rack.

NOTE: Makes 12 muffins.
