Peach Mango Crisp

Great summer dessert.
You can even make in winter, just use frozen peaches and mangos.

Ingredients

  • 4 med. fresh peaches, peeled & sliced (see Note below)
  • 3 ripe mangos, peeled & chopped (see Note below)
  • 1/3 c. white sugar
  • 1/4 c. orange juice
  • 2 Tbls. whole wheat pastry flour
  • 1 Tbls. lemon juice
  • 1/2 t. salt
  • frozen vanilla yogurt or vanilla ice cream

Topping

  • 1/2 c. whole wheat pastry flour
  • 1/3 c. packed brown sugar
  • 3 Tbls. cold butter
  • 1/2 c. granola (without raisins)

Instructions

In a large bowl, combine peaches, mangos, white sugar, orange juice, flour, lemon juice and salt.

Transfer to an 11 x 7 x 2-inch baking dish coated with non-stick cooking spray.

In a small bowl, combine 1/2 c. whole wheat flour and brown sugar. Cut in butter until crumbly (I use a mini food processor and pulse until crumbly). Stir in granola and sprinkle over fruit mixture.

Bake at 350 degrees for 35 minutes or until topping is golden brown and fruit is tender.

Serve warm with frozen vanilla yogurt or vanilla ice cream.

NOTE: If you don't have fresh peaches and mangos on hand, frozen work also. I use a 12 pkg. of diced mango and frozen peach slices to equal 4 medium peaches. Thaw in refrigerator before assembling.
