Overnight Oats: Pineapple & Coconut

Easy and a nutritious way to get that tropical vibe.
Overnight oats are a popular breakfast in Switzerland.
They were created by Dr. Maximillian Bircher for his patients in Zurich because it helps to slow digestion and feel fuller, longer.



Ingredients
- 2/3 c. rolled oats, (not quick cook)
- 2/3 c. (5.3 oz. container) plain Greek yogurt
- 2/3 c. almond milk (regular milk is fine)
- 2 t. chia seeds
- 1/2 c. pineapple tidbits or crushed with some juice (more for garnish)
- 2-3 Tbls. shredded sweetened coconut
- 2 t. pure maple syrup, optional
Topping Choices
- pineapple tidbits or a dollop crushed pineapple
- sweetened coconut
- banana slices
- chopped pecans, optional
Instructions
Add all ingredients to a small bowl and stir to combine.
Pour mixture into an airtight container (I like to use a mason jar) and refrigerate overnight.
In the morning, when ready to eat, garnish with toppings of your choice.
