Overnight Oats: Mocha & Coffee
Like eating dessert for breakfast only with health benefits.
Made with 2 of my favorite flavors, coffee and chocolate.
Overnight oats are a popular breakfast in Switzerland.
They were created by Dr. Maximillian Bircher for his patients in Zurich because it helps to slow digestion and feel fuller, longer.
Ingredients
- 1 c. rolled oats or old fashion oats
- 1 Tbls. chia seeds
- 2 Tbls. cocoa powder
- 3/4 c. unsweetened almond milk (regular milk is fine)
- 1/2 c. strong brewed coffee
- 2 Tbls. maple syrup
- 1 t. vanilla extract
- 1 Tbls. mini chocolate chips (add in the morning)
Toppings
- 1 Tbls. additional mini chocolate chips
- slivered almonds, roasted (optional)
- unsweetened coconut (optional)
Instructions
Place all ingredients, except chocolate chips and almonds, into a medium glass bowl or jar and mix to combine.
Cover and refrigerator overnight.
In the morning, stir in a few mini chocolate chips and top with additional mini chocolate chips and slivered almonds pr unsweetened coconut, if desired.
