Overnight Oats: Brown Sugar & Espresso

Overnight oats are a popular breakfast in Switzerland.
They were created by Dr. Maximillian Bircher for his patients in Zurich because it helps to slow digestion and feel fuller, longer.
Ingredients
- 2 Tbls. brown sugar
- 1 c. rolled or old fashioned oats (not instant or quick cook)
- 1 Tbls. chia seeds
- pinch of salt
- ΒΌ c. espresso (concentrate, regular espresso or cold brew concentrate) - See Note
- 1 c. unsweetened plain almond milk (regular milk works too)
Garnish Options
- 2 Tbls. mini chocolate chips
- 2 Tbls. unsweetened coconut
- 2 Tbls. Plain yogurt, if you prefer a creamier texture.
Instructions
Add the brown sugar, rolled oats, chia seeds, and salt to a glass mason jar or meal prep container and stir the ingredients together.
Pour the espresso and milk over the oats and mix until combined.
Cover and place the oats into the refrigerator overnight.
It is good plain or garnish as desired, with mini chocolate chips, unsweetened coconut and plain yogurt (if desired)
Makes 2 servings
NOTE: I make my espresso in my Keurig (a shot), however you can also use cold brew concentrate (homemade or purchased), strong coffee or made from a powder purchased from grocery store.
