Overnight Oats: Banana Cream Pie

Especially yummy with just chopped walnuts and slices of banana!
Overnight oats are a popular breakfast in Switzerland.
They were created by Dr. Maximillian Bircher for his patients in Zurich because it helps to slow digestion and feel fuller, longer.
Ingredients
- 1 large banana, mashed (extra banana for topping)
- 1-1/2 c. old fashioned rolled oats (not instant)
- 1-1/2 Tbls. chia seeds
- 1-1/2 t. honey
- ¾ t. vanilla extract
- 2-1/2 Tbls. plain low-fat Greek yogurt
- 2 c. plain, unsweetened almond milk (regular milk is fine)
Toppings
- banana slices with strawberries
- banana slices with chopped walnuts (adding unsweetened coconut is optional)
- banana slices with mini chocolate chips (adding unsweetened coconut is optional)
Instructions
Mash banana in a medium sized bowl.
To the bowl, add oats, chia seeds, honey, vanilla, yogurt and milk; mix well. Transfer to a large mason jar or cover bowl with saran wrap.
Refrigerate overnight.
In the morning, portion out a serving and add toppings of your choice.
Serves 4
