Oven Roasted Potatoes
Ingredients
- 4 baking potatoes (I like 4 large Yukon Golds)
- 2 Tbls. butter
- 2 Tbls. olive or canola oil
- 1 t. paprika
- salt and pepper to taste
- onion powder and garlic salt, to taste (optional)
Instructions
Melt butter; add oil, paprika, (or chili powder) salt and pepper, garlic and onion powder if using and set aside.
Peel potatoes and cut into chunks.
Place in a shallow 2 qt. baking dish. Pour butter/oil mixture over potatoes and toss to coat.
Bake at 400 degrees, uncovered 45-60 minutes.
NOTE: If you like a kick, use 1/2 t. chili powder instead of the paprika.
