Oven Parmesan Chips

Good dipped in low-fat sour cream

Ingredients

  • 4 medium potatoes, unpeeled
  • 1/4 c. melted butter
  • 1 Tbls. finely minced onion (dry are fine)
  • Salt and pepper to taste
  • dash of paprika
  • 2 Tbls. freshly grated Parmesan cheese
  • low fat sour cream, optional

Instructions

Cut potatoes into 1/4" slices (not too thin). Place on a (foil-lined) greased baking sheet in a single layer.

Mix butter, onion, salt, pepper, and paprika; brush on one side of potatoes, then turn and brush other side.

Bake at 400 degrees for about 30-40 minutes, or until potatoes are tender and golden.

Sprinkle with Parmesan cheese; serve immediately.
