Oriental Wild Rice with Dried Cherries

Great side dish for an Oriental main course
Ingredients
- 1 c. fresh snow peas, halved
- 1 c. cooked wild rice
- 1/2 c. cooked long grain brown rice
- 1/2 of a small can of sliced water chestnuts
- 1/2 c. dried cherries
- 1/4 c. thinly sliced celery
- 1/8 c. sliced green onions
- 1/2 c. cashews, toasted
Dressing
- 3 Tbls. white sugar
- 1-1/2 Tbls. cider vinegar
- 2-1/4 t. Kikkoman low-sodium light soy sauce
- 1 garlic clove, minced
- 1/4 - 1/2 t. minced fresh ginger root
- 3 Tbls. canola oil
Instructions
In a large bowl, combine snow peas, rice, water chestnuts, cherries, celery and green onions.
For dressing, combine the ingredients and process a couple of seconds in a food processor until blended. Pour over rice mixture and toss to coat.
Cover and refrigerate until serving. Just before serving, stir in cashews.
NOTE: Serves 2-4; double this recipe to serve 4-6
