Oriental Dip with Crackers

Serve with crackers
Ingredients
- 2 chicken breasts, grilled and cut into small pieces
- ½ - ¾ c. cashews
- 3 Tbls. sliced green onions
- 1 Tbls. chopped fresh parsley, optional
- 1 clove garlic, minced
- 2 Tbls. low sodium soy sauce (Kikkoman)
- ½ t. fresh ginger, chopped fine
- 8 oz. pkg. low fat cream cheese, softened
- 1 Tbls. milk
- Crackers (of your choice)
Sweet & Sour Sauce
- 1/8 c. brown sugar
- 1 t. cornstarch
- ½ c. water
- 1/8 c. (2 Tbls.) ketchup
- 1 Tbls. white vinegar
- ½ Tbls. Worcestershire sauce
- 2 drops hot pepper sauce
Instructions
Combine chicken, cashews, green onions, parsley, garlic, soy sauce and ginger; mix well and chill several hours or overnight.
Sauce: Combine all sauce ingredients and boil approximately 4 minutes until thicken. Chill until read to assemble.
Base: When ready to assemble, blend cream cheese and milk; spread softened cream cheese mixture onto a 10-inch round plate or platter.
Layer chicken mixture on top of cream cheese. Drizzle sauce on top and serve with crackers.
NOTE: Great appetizer with stir-fry or any oriental main dish.
