Orange, Walnut, Gorgonzola & Mixed Greens Salad with Citrus Vinaigrette

Ingredients

  • 3/4 c. walnut halves
  • 10 oz. mixed salad greens with arugula (can also add a little romaine lettuce if desired)
  • 2 large navel oranges, peeled and sectioned
  • 1/2 c. sliced red onion
  • 1/4 c. crumbled Gorgonzola cheese or low-fat Feta

Dressing

  • 1/8 c. canola oil
  • 1/8 c. olive oil
  • 1/3 c. orange juice (fresh is better)
  • 2 Tbls. white sugar
  • 1 Tbls. good balsamic vinegar (18 yr or older)
  • 1 t. Dijon mustard
  • 1/8 t. dried oregano
  • 1/8 t. ground black pepper

Instructions

Place the walnuts in a skillet over medium heat. Cook 5 minutes, stirring constantly, until lightly browned.

In a large bowl, toss the toasted walnuts, salad greens, oranges, and red onion.

In a large jar or container with a lid, mix the olive oil, canola oil, orange juice, sugar, vinegar, mustard, oregano, and pepper. Seal and shake to mix.

Divide the salad greens mixture into individual servings. To serve, sprinkle with Gorgonzola cheese (or Feta) and drizzle with the dressing mixture.
