Orange Roughy: Herb Coated (or Cod)

Ingredients

  • 1/4 c. butter, melted
  • 2/3 c. butter-flavored crackers crumbs (Ritz .... we use whole wheat)
  • 2 Tbls. grated Parmesan cheese
  • 1/2 t. dried oregano
  • 1/2 t. dried basil
  • 1/4 t. garlic powder
  • 1 pound orange roughy or cod fillets

Instructions

Place butter in a shallow bowl.

In another bowl, combine the cracker crumbs, parmesan cheese, oregano, basil and garlic powder. Dip fillets in butter, then coat with crumbs.

Place on a lightly greased baking pan.

Bake uncovered at 400 degrees for about 20 minutes or until fish flakes easily with a fork. Serves 4

NOTE: To get rid of fishy smell, rinse and soak fillets in a little milk (in a zip lock bag) 1 hour before cooking. Rinse and pat dry with paper towels.
