Orange Ricotta Pecan Pancakes

Ingredients

  • 1 egg
  • 1 c. low-fat ricotta cheese
  • 3/4 c. low-fat milk
  • 1/2 c. orange juice
  • 1/4 c. butter, melted
  • 1/2 t. grated orange peel
  • 1/2 t. vanilla extract
  • 1-1/2 c. unbleached all-purpose white flour
  • 3 Tbls. white sugar
  • 1-1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • chopped pecans, optional
  • syrup

Instructions

In a small bowl, combine the flour, sugar, baking powder, baking soda and salt.

In another bowl, whisk the egg, cheese, milk, orange juice, butter, orange peel and vanilla.

Stir into dry ingredients just until moistened. Fold in pecans if desired.

Pour batter by 1/4 cupful’s onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown.

Serve with maple or breakfast syrup.

NOTE: Makes 12 pancakes.
