Orange Muffins (Whole Wheat)

Ingredients

  • 1 c. white unbleached all-purpose flour
  • 1-1/2 c. whole wheat pastry flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 1/3 c. canola oil
  • 1/2 c. white sugar
  • 2 eggs
  • 1 c. orange juice
  • 2 Tbls. orange zest
  • 1/2 t. orange extract
  • 1/2 c. chopped pecans

Instructions

In a small bowl, combine flours, baking powder, baking soda and salt.

In a large bowl, beat eggs, sugar and oil. Add orange juice, extract and zest.

Stir in dry ingredients until just moistened. Fold in pecans.

Spoon batter into greased muffin cups, filling two-thirds full.

Bake at 375 degrees for 15-20 minutes, or until lightly browned.
