Orange Cranberry Bread with Orange Glaze

Perfect over the Christmas Holiday

Ingredients

  • ½ c. canola oil
  • 2 large eggs
  • ¾ c. buttermilk
  • 1 Tbls. fresh orange juice (save zest)
  • ½ t. vanilla
  • 1-1/2 c. all-purpose unbleached white flour
  • ½ t. salt
  • 1 t. baking powder
  • 1 c. white sugar
  • zest of 1 large orange
  • 1 c. fresh cranberries, halved
  • 1/3 c. chopped walnuts, optional

Orange Glaze

  • 1 c. powdered sugar
  • 1-1/2 Tbls. fresh orange juice
  • 1 t. orange zest

Instructions

In a large bowl, whisk together flour, salt and baking powder. In a small bowl, combine sugar and orange zest. Rub together with your fingers until fragrant. Whisk into the flour mixture. Set aside.

In a separate medium bowl, combine oil, eggs, buttermilk, orange juice and vanilla.

Slowly add the wet ingredients to the dry ingredients. Stir just until combined. Fold in cranberries and walnuts if using.

Pour into a large 8-1/2 x 4-1/4 loaf pan sprayed with cooking spray and dusted with a little flour. You can also use 3 mini loaf pans.

Bake at 350 degrees for 70 -75 minutes (large loaf) or until toothpick comes out clean (if loaf starts to get too brown, drape a piece of foil over the top to finish baking). If using mini loaves, only need to bake 40-45 minutes.

While bread is cooling, make the orange glaze. In a small bowl combine powdered sugar, orange juice and orange zest. Whisk until smooth. Drizzle the glaze over the bread.
