Omelets: In a Bag

A camping favorite!
Fun to make and everyone can put whatever they want into their individual bag (see different variation options).
Ingredients
- 2 eggs
- 2 Tbls. chopped peppers (red, green, yellow)
- 1 t. chopped onion
- 2 Tbls. bacon, crumbled and fried crisp or chopped ham
- 2 Tbls. shredded cheese (cheddar, Swiss or your choice)
- quart-size heavy duty (freezer) zip lock bag
Variations (increments to your liking)
- Southwest: chorizo (fried and grease drained), black beans (rinsed and drained), black olives, diced peppers, Mexican cheese & chopped red onion (regular is fine). Top with salsa and diced avocado
- Mediterranean: bacon (fried and diced), fresh baby spinach leaves (torn), crumbled feta cheese and chopped sweet onion (regular is fine).
Instructions
Write name on ziplock bag using a permanent marker.
Put all ingredients into a bag. Be sure to squeeze out all the air!
Get a large pot of water boiling and put the bag(s) into the pot.
Keep boiling for about 15 minutes or until eggs look firm and cooked through (the bags will start to float).
Open bag, dump contents onto a plate and enjoy
