Oatmeal Pancakes (healthy)

Amazingly deceiving

Ingredients

  • 6 egg whites (or 3 whole eggs) - See note below
  • ½ c. low-fat cottage cheese
  • ½ c. old-fashioned oatmeal
  • ¼ c. wheat germ
  • ¼ c. ground flax seed
  • 1 t. baking powder
  • 1 Tbls. canola oil (extra for frying)
  • ½ t. cinnamon
  • Syrup, for serving

Instructions

Separate egg whites and beat whites until fluffy. NOT STIFF! If using whole eggs (for more moist pancakes), whisk until blended. Set aside.

Place oatmeal in food processor and pulse just to break down. Add remaining ingredients and pulse again just until mixture is uniform. Will look crumbly.

Transfer blended ingredients to a large bowl and using a wire whisk, fold in egg whites (or egg mixture) until mixture is blended.

Lightly coat a nonstick griddle with a little oil and heat accordingly.

Ladle batter (you will get about 9 pancakes) onto pre-heated griddle and cook until bubbles appear on top and the underside is nicely browned, about 2 minutes. Flip and cook the pancakes on the other side, about 1-2 minutes longer.

Serve with syrup of your choice.

NOTE: Egg substitute: Use 1 whole egg in place of 2 egg whites. You can also use 1 whole egg and 4 egg whites.
