Oatmeal: Baked Maple & Brown Sugar with Pecans (or Slow Cooker)

Perfect on a cold winter morning and steel cut oats are so good for you.

Ingredients

  • 2 c. steel cut oats (not quick cook)
  • 1/3 c. brown sugar
  • 1 t. cinnamon
  • 1/2 t. salt
  • 3 Tbls. butter
  • 3/4 c. chopped pecans, roasted
  • 1/3 c. pure maple syrup
  • 6 c. water

Optional Toppings, if desired

  • additional brown sugar
  • a little milk (1-2 Tbls. per serving)
  • golden raisins, optional

Instructions

Coat inside of a 4-5 qt. slow cooker with non-stick cooking spray.

All add ingredients to slow cooker and stir. (see note below)

Cook for about 4-5 hours on low.

Stir before serving and add a little brown sugar and additional milk for each serving. Raisins optional.

Baked Method: Grease a 1-1/2 qt. casserole dish, combine oatmeal ingredients and bake in oven for 1 hr at 350 degrees,

NOTE: I added all ingredients except maple syrup and water before bed. Then got up in the middle of the night to add the water and maple syrup, and turned crock pot on to cook. Time it according to when you want to eat breakfast. Another option is to make during the day and heat up in the morning.
